Having a box of oranges from the holidays that needed to be used I started squeezing them for orange juice.
Orange peels have so many uses and can be composted. Trying to decided what to do with the ones I just squeezed and in a baking mood, I went to the local grocer and purchased an organic cake mix and cage free eggs. Had organic milk at home. I try to purchase "organic" as much possible, but have to consider cost and what's available in town.
Mixed up the batter and filled the orange peel cupcake holders.
Baked according to the instructions on the box.
Made up a quick orange flavored frosting and decorated them with orange curls.
Note: You could scrape all the pulp out the orange peel so more batter could be placed in them. Time wise I left the pulp in them which also gave the cupcakes a slight orange flavor. The cupcake is small when removed from the orange peel. That's ok, now you can eat 2 or 3 of them. Orange you glad for this appealing idea!!!
we made orange peel cupcakes in Boy Scouts. It's a fun thing to do. Yours look much much nicer.

ReplyDeleteThank you for all the kind comments. Never thought a simple experiment would become news. If anyone bakes some cupcakes in grapefruits, decorates them differently in a peel, displays them in a creative way for an occasion, I would love to see photos. You may post them on my Facebook Fan Page, email them to me desiree@beyondagarden.com or let me know where you posted pictures. Thanks.

ReplyDeleteI'm so glad I found this! I bought 2 cases of grapefruit a week ago, and I'm slowly working my way through them, but I have a ton of grapefruit rinds leftover! Last night I candied the rinds of 16 grapefruits, but I'm not really pleased with the results. I'll try using them as cupcake liners next. Thank you!

How does one get the muffin out of the orange cup? Do we have to eat the muffin with a spoon, or is there a way to make the muffins fall out?
ReplyDeleteWhat a great kid project! My daughter loves to bake -- and so do my Girl Scouts -- so this one we'll have to try. Thanks!

ReplyDeleteGreat idea, when you used some fruits for making orange juice...
Greetings from Germany.
There is a slight orange flavor in the cupcakes, but not to strong. Appreciate the comment and greetings.
ReplyDeleteBlogging about my orange peel experiment and then receiving all the nice and thoughtful comments has brought many smiles to me. Thank You.

hmmmmmm ....... now this just made me think .... I wonder what it would taste like with a chocolate muffin? I came across quite a number of chocolates in the UK that combined orange with chocolate and it's quite a nice combination - maybe mix a bit of the freshly squeezed orange juice in with the chocolate muffin batter just to make the taste of the orange come through stronger? I'll try it and let you know!
ReplyDeleteRix,
ReplyDeleteI'd bet chocolate muffins in orange peels would be delicious! I love that combination. I love finding different cupcake tins like the orange peels. http://picky-palate.com/ just did muffins in ramekins as gifts--they looked great too!
but wont the orange peel burn?
